breakfast at Communal in Provo Utah

Communal starts breakfast service

Reviewed by Becky
Starting today, Communal serves breakfast.  You might ask, what is Communal and why is this a big deal?  For one, breakfast is my absolute favorite meal of the day and two Communal is one of my favorite restaurants around Utah. I first visited Communal for lunch months ago and have been trying to find an excuse to go back since. Now, I had the perfect excuse, breakfast. One of the top chefs around giving his best shot at breakfast foods makes for a magical morning.
Herb omelet with creme fraiche, steel-cut oats with house dried bananas, and fresh Italian sausage were just a few of the dishes that filled our table with happiness.

Communal resides in Provo on University Street serving fresh, seasonal, and local foods.  With farm fresh eggs and honey from Clifford Family Farms and milk from Winder Dairy, Communal simply does it right.
A group of bloggers gathered around the long table and sampled all of Communal’s breakfast menu.  We tasted and gave our opinions.  Chef Colton was a genius in the kitchen.  Previous to his position at Communal, he spent time in the Sundance kitchen.  His experience proved golden.  Plus, with their open kitchen, you can watch all the cooking.
What were my favorites from our lovely brunch?  The baked eggs with tomato and chorizo sausage amazed me.  It was served with perfectly crisp toasts that made for the best dipping accompaniment.
Communal Breakfast
I surprised myself by how much I loved the baked eggs.  You see, I am usually more of a sweet-toothed gal during the morning hours – french toast, pancakes, crepes and granola usually comprise my weekend splurge.
The sweeter menu items were also outstanding.
The granola at Communal perfectly mixed with dried apricots, cranberries and ideally toasted nuts.  The granola is comparable to the old Avenues Bakery granola that I tried to imitate in my own kitchen.  I only hope Communal will start selling their granola so I can enjoy it at home.

Communal’s oats are superb.  I am an oats fanatic. Most winter mornings I enjoy a big bowl of soul-warming oats and add in whatever that day needs – sometimes peanut butter, or bananas, berries, maple syrup, etc.  If I’m going to have oats away from home they should at least be as good as what I make at home.  And these were, especially with the dried bananas to mix in.
Communal Breakfast
I really enjoyed everything we tried – biscuits and gravy with a generous amount of sausage in the gravy – steak and eggs topped with salsa verde.  And I can’t forget the French Toast with roasted apples and real maple syrup and made with their house-made pain de mie (perfect loaf bread).
blueberry muffins at Communal
And last but certainly not least.  Blueberry Muffins.  These deserve their own blog post entirely (of which I wrote and even included the Communal blueberry muffin recipe).  I have been searching for the perfect blueberry muffin recipe and I only wish I could snag this one.  These muffins were perfectly moist in the center, crisp on the outside with a light dusting of sugar on top.  Simply amazing.

  1. I still haven't made it to Communal (so embarrassing!), but I love Pizzeria 712. I'll have to make the drive to Provo soon. I'm anxious to try it out, and the breakfast sounds so good. I don't care for sugar in the morning and it looks like they have lots of options for me. And I love baked eggs!
